Ingredients

Cake

  • 250 g pitted dates
  • 250 ml boiling water
  • 1 tsp bicarbonate of soda
  • 2 tbsp ground flaxseed and 6 tbsp water
  • 80 g plant-based butter, softened
  • 120 g light brown sugar
  • 1 tsp vanilla extract
  • 200 g plain flour
  • 1½ tsp baking powder
  • ½ tsp salt

Caramel sauce

  • 1 jar Ella Stína Karamellusósa caramel sauce (250 ml)
  • Or homemade: 200 ml coconut cream, 100 g coconut sugar and a pinch of salt

To serve

  • Fresh strawberries
  • Plant-based ice cream or whipped oat cream

Method

  1. Heat the oven to 180 °C. Grease a 22 cm tin and line the base with baking paper.
  2. Roughly chop the dates, pour over the boiling water and stir in the bicarbonate of soda. Leave for 10 minutes, then mash with a fork.
  3. Mix the ground flaxseed and water in a small bowl and leave to thicken for 5 minutes.
  4. Beat the butter and sugar until light. Add the flax mixture and vanilla.
  5. Mix the flour, baking powder and salt. Fold the dry ingredients and the date mash into the butter mixture in turns.
  6. Pour into the tin and bake for 35–40 minutes, until a skewer pushed into the middle comes out clean.
  7. Warm the caramel sauce in a small pan. If making it at home, simmer the coconut cream, sugar and salt gently for 8–10 minutes, stirring until it thickens.
  8. Poke a few holes in the warm cake, pour over half the sauce and serve the rest alongside with strawberries and ice cream.
